Recipes From Zoës Kitchen: Spicy Wine and Mediterranean Herb Zoes Marinade & Quinoa Salad

SPICY WINE & MEDITERRANEAN HERB
ZOES MARINADE

(DELICIOUS WITH CHICKEN AND RED MEAT - GRILL OR ROASTED)

2 tbsp. Zoës Kitchen Spice of Life
1 and 1/2 cup dry white wine (or red wine for red meat)
1/2 cup extra virgin olive oil
1 tbsp. chopped fresh basil,
1 tbsp. chopped fresh parsley
1 tbsp. chopped fresh thyme
1 tsp paprika
¼ cup of fine chopped red onion
1 clove minced garlic
1 of your favorite spicy chili pepper, split in half, discard seeds


HONEY CITRUS
ZOES MARINADE
(FANTASTIC ON CHICKEN, PORK AND SEAFOOD - PAN SIRED OR GRILLED)

1 and 1/2 tbsp. Zoës Kitchen Spice of Life
1/2 cup olive oil
2 tablespoons honey
Zest and juice of 1 orange
Zest and juice of 1 lemon
2 cloves minced garlic
2 sprigs rosemary chopped very fine
1/8 tsp Red chili flakes
Sea salt to taste

BALSAMIC MUSTARD
ZOES MARINADE
(GREAT ON ANY TYPE OF MEAT OR VEGETABLE - ROASTED OR GRILLED)

1 and 1/2 tbsp. Zoës Kitchen Spice of Life
1/4 cup balsamic vinegar
1/2 cup extra virgin olive oil
¼ cup water
2 tablespoons tomato paste
1 and 1/2 tablespoon Dijon mustard
2 cloves garlic, minced
1/2 teaspoon dried oregano
1/2 teaspoon fresh chopped basil
Sea salt and freshly ground black pepper, to taste


PROCEDURE for all 3 recipes
• Combine all the ingredients together in a mixing bowl, mix well with a wisk until all the ingredients are very well incorporated
• Coat your favorite ingredients with the marinade and let the flavors bloom for a minimum of 2 hours up to 12
• Proceed with your choice of cooking technique …grill, pan sear or roast

Quinoa Salad

Ingredients:

Salad:

  • Cooked Quinoa
  • Tomatoes, Chopped
  • Cucumbers, Chopped
  • Celery, Diced
  • Green Onions, Chopped
  • Broccoli, Blanched or Raw
  • Feta, Crumbled
  • Olives, Pitted
  • Mixed Greens
  • Zoës Kitchen Spice of Life Seasoning
  • Lemon Wedge

Dressing (Lemon Vinaigrette):

  • Oil
  • Fresh lemon juice
  • Garlic
  • Pepper
  • Spices

Directions:

Toss cooked quinoa with tomatoes, cucumbers, celery, broccoli, green onions, olives, and lemon vinaigrette. Top with feta, serve over a bed of greens.
