Prepare the pan
1. Take your ½ inch-deep baking pan and coat it with butter (we like to use clarified butter)
2. Let the pan sit in the refrigerator for a minimum of 4 hours
Add the dough
1. Stretch out your pizza dough to fit the length of the pan (we use a technique called “Slapping”)
2. Place the dough into the pan and push it to the edges with your fingers
3. Make sure the edges of the dough climb up the side of the pan to create your “crust”
4. Use a fork to cover the dough with holes, this is called “Docking”
5. Cover the dough and dough pan in plastic bag or wrap
6. Let your dough sit at room temperature overnight, this is called the “Proofing Process” and will raise your dough to the height of your pan
