Southern Cooking with SidWill’s Café

This morning our chefs travel all the way from Jamestown for a taste of southern dining at its best.

Southern Favored Green Beans

2- 16 ounce cans of cut green beans
1/2 -small carrot (grated)
1/2 -small onion ( diced medium)
Pinch of salt
2- tablespoons of sugar
1/8 teaspoon of black pepper
1 -tablespoon season salt
1/3- cup of canola oil

Put canola oil, carrots and onions in medium sauce pan and sauté on medium heat about 4 minutes.
Drain green beans, add green bean and 2 cups of water to sauce pans.
Add other ingredients cover and bring to a boil for about 5 minutes.
Reduce heat and simmer 10 minutes, serve and enjoy

SidWill’s Oven Roasted Leg Quarters and S'wingz

4-6 leg quarter or 20 chicken party wings
1/2 medium onion (sliced thin)
3 -tablespoons of seasoned salt
1- Stick of butter

Rinse chicken, spread on sheet of foil, season both sides of chicken Put in zip lock bag or sealed container overnight (please clean and sanitize all surfaces that chicken come in contact.)
Preheat oven to 400 degrees
Sprinkle onion in large aluminum roasting pan Place chicken on onions (skin side up) Slice butter and place equally apart Cover with foil (airtight seal.)
Bake covered for 1 hour.
Uncover and bake 10 more minutes.
